The meat and how it is prepared is the main thing. The 'tahini' sauce is very important however, I have tried various sauces when I have no Tahini (a creamy cucumber or garlic dressing can be tasty). Yes, there are a few spices and herbs but that's what makes it work. good luck! ktc

A lebanese style marinate includes a half cup of arabic coffee. However, there are many changes to the recipe depending on the culture and individuals. Try a cup of plain yogurt instead (I do not use it, but many do). You can also increase the lemon juice to about a cup. Shawarma is fairly difficult to reproduce with out the 'meat cone' and very slow fire cooking. This recipe does the trick when you can't get out for an authentic shawarma. thanks for the comment.

Hi, at 190C and depending on the potato, a safe time to work with. I can bake a nice size potato at 218C in about 50 minutes, however if your new at baking potato, it may burn or be under-cook. potatoes can cook very quickly when fried and are more likely to burn on the outside before the inside is cooked (particularly with a large cut 'fry'). The potato will continue to cook in the oil after removed from heat. The second frying will then crispen them up to the golden brown desired. Try this method and you will have a great tasty French (some say actually Belgium) Fry! Good luck. 'When low on food always have potatoes' they will get you through the hunger. KtC

Thank you for the tip. I have made it similar to your descriptiom including the heating of the piti in the pan (the flavours really blend into the piti that way). Not sure where the pickles came from but they always seem to be on the ones I get here from the shops. Damn tasty food though, one of my favourites. thank you again very much! cheers!

Hi. I make the souvlaki in a pan with a hint of olive oil ( let it get hot first ) then ''grill'' the pork pieces, use salt, black pepper and oregano. As for the pita, heat it up on the same pan you made the souvlaki. Also tzatziki is a must and we don't use pickles in greece. Cheers

idk where you get your capicola from, but that does not look like capicola to me... i don't mean to be critical but capicola happens to be one of my favorite deli meats and the capicola in the video has a completely different appearance than what i know... possibly this isn't italian capicola?
