Hi Greg. I found your vidio interesting and entertaining.Like the cigar view. I agree slow cooking is best but I do like to try differnt sauces and sometimes I speed things up to two hr cooking times for unexpected company.Keep up the good work.

"Red & processed meats cause bowel cancer, explained Amanda Cross, an epidemiologist at the National Cancer Institute (NCI). "This is the largest study to look at the effect of red and processed meat on multiple cancer sites, such as bowel/colon, laryngeal and liver cancer." Red meats included beef, pork and lamb. Processed meats included bacon, red-meat sausage, poultry sausage, luncheon meats, cold cuts, ham, hot dogs and low-fat hot dogs

You are wrong about Bar B queing. Smoking is not bar-bcueing. True Bar-b-que does involve fire directly.

Ok 200 degrees at 6 hours does yield fall off the bone ribs. But the points solomon did not point out. Rib meat selection. Personally I go with pork based babyback ribs. I avoid beef ribs. I also go with a honey based barbaque sauce and bast the ribs every hour on the hour in fresh sauce. But then I am wrapping them in tin foil and doing this in the oven. But the results are the same. GOOD RIBS...

By: jcthoma2. on 24 Jul 08, 15:26:24
thermometer!!! Be man and use your hand. Just Joking. Doing BBQ is in the I of the beholder of course. I live in eastern North Carolina so vinegar based sauce is perferred and cooking the whole hog is usually the way to go. I have family in Cali and they consider cooking hot dogs and hamburgers BBQ which to me is just grilling out. But anyway cool clip and keep cooking.

The hardest part is control of the heat. Wind can make a 200 degree fire very hard to maintain, 250 is fine with me. Brisket can take 24 hours or more depending on the size. I've done it like you for over twenty years and it has worked properly 80% of the time. I blame the rest on too much fire and too much beer. Peace.
By: jl2box. on 31 May 08, 14:05:55
I highly agree true BBQ is using indirect heat low & slow for a long period of time!

Today is my 1st day of trying to smoke BBQ. I know nothing yet. I have a pretty nice plain barrel charcoal grill. Okay couple questions for anyone please: Does anyone know how I can quickly modify this grill to work as a one time smoker with this grill? I've been checking out a particular smoker and it's too expensive for me right now. Also, Why apple cider VINEGAR? Why not just apple juice? Are those aftermarket rib racks any good or just use the rib 'coil up" method with a wooden skewer?
