Hi. Thanks for reply. No need to wait though. All my apples have come from hedgerows and common land. You have to hunt around but there are plenty out there. I saw some myself and asked around for the rest. Apparently, if you use Freecycle, you'll find ppl giving apples away on there, or you can put a request on Freecycle for them. You may also find that your local homebrew shop assistant will be able (praps not willing) to tell you where there are some good trees. Cheers, hic. :)

2. Add cider yeast, ferment in usual way and finish in bottles as usual. Its that simple apparently, you don't need to add sugar barring the 2ndry fermenting in bottles known as priming. Also is a good idea to measure the ph and balance with precipitated chalk but you can do that either before or after fermentation, so don't delay because the apples are well and truly ready! There are cider recipes on Google but was advised to ignore fiddly ones, should be easy and fun. Do sterilize everything.

1. I'm no expert, my local home brew shop guy is and I just started 5 galls. You need about 2-3 sacks mixed apples, mainly sweet. Wash them, don't worry bout a bit of bruising. Pulp them using electric drill with plaster mixer attached in 5 gall bucket. When pulped, break down further with hand blender. Then use a jug to tip the pulp into a brewers mesh bag, 1lt at a time and wring out into brewing bucket till you have 5 gals.
