The way to do it is to pour milk "under" the shot, and then start shaking the lip of the jug from side to side. Once the milk starts to hit the top, start slowly pulling the jug towards you as you shake. To finish, pull the lip of the jug up and away from yourself, so the leaf faces "away" from you. People can definettly tell the difference blind. A 15 second, is very fast, often will seem underdeveloped and weak, which you may prefer, though I don't know anyone liking it that fast, 20-25 maybe. A 35 second shot, properly extracted will most likely be a ristretto, often shorter in volume, like the second one. Some love this, others believe it's not balanced, though if done right is often "sweeter". Some people will even like ristrettos that are almost a minute long, though very short.

Great shots. My personal preference for espresso beans: 100% arabica beans roasted through the first crack and then allowed to brown just a hair before dumping the roast. I find that a medium-roasted "City+" to "Full City" bean tastes much better (nuttier and smoother with less acidity), pulls much more consistently (gives a head of very thick crema which sticks to the side of the cup), and contains more oil (dark beans = oil migrates and burns off). Roast your own guys.

No, this is not true. 5-20% of *good quality* robusta is perfectly all right, all leading Italian companies do the same. It's a question of individual taste but saying that only 100% arabica is acceptable is downright false. Popularized in the US mainly by Illy with their medium quality but highly overpriced coffee.

Consider making a similar video showing the top of the shot as well. A shot pulled too slow will be too dark, a shot pulled too fast will have a lot of white, and just right will be rusty with light and dark splotches. I prefer 22-25 seconds with the blend we use at work. And of course all of the other factors like tamping, atmospheric pressure, grind, dose, etc..still a fantastic video that's very helpful to baristas and newbie baristas! You should make more!

The perfect shot was the one in the middle - remembering international standards are 25-30mls in 25-30 seconds. I noticed your Atomospheric pressure gauge was a bit high.. Maybe drop that down a bit, and try hitting the white line around 29 - 30 seconds. Trust me you'll love the results. ;'

There is no different kind of coffee in northern part o Italy (I live in Milano), but they are right when says that the northern Italy coffee is delicate than the south or middle Italy coffee. It change the "miscela" and the way that the coffee is served. BTW all italian coffee espresso is the best you can drink. StarBucks don't serve real espresso, also in France is difficult to find a real espresso. Go in any part of Italy and you can get a real coffee, it is like a delicious juice of beans.

Just the usual stuff. Correct equipment, half trained personnel. They know the basic steps but are completely unaware of the finer details. Medium quality drinks, nothing to write home about. Granted, much better than the average home drip coffee but still a very far cry from real espresso.

the word "exactly" was said approximately 15 times... 10 by the guys and 5 times by the girl. I have found that using the word "exactly" when talking about putting coffee grounds in a filter and then flicking switch makes the whole process seem to be a very exact science. I am convinced now that expresso making is a fine art beyond my cababilities- which helps me justify spending $4 for my favorite at Starbucks. Exactly! :)

If you have two switches then turn one off when you have sufficient pressure. If you only have one switch then your machine might need servicing: the pressure value should be tuned to around 0.9 bar I believe but it is the thermostat which decides when to turn off the second element. Perhaps they're not well calibrated.

help nivzur !!! how do u adjust the pressure-release valve that your using to heat cups etc. ? mine releases constantly and robs me of the water and the pressure to clear the shower-head or even have enough pressure to pull a shot ! when , how , and WHY to use it? why not use the wand to heat cups etc. ? mine won't stop releasing valuable pressure and limited water supply. do u need a special tool? at least with the wand i can shut it off... can u advise? thanks nivsur !!

- No, I feel that the bearings do not make any worthy difference. - Switch: Turn on in the "2" position untill grouphead at 65 degrees celsius in the point I measure, then to the "1" position, let the steam settle, then pull the shot.

I just lucked into a 1960's Europiccola. One of the first things I did was turn my own tamper but seeing as how it was slightly too large and had to be given to a friend with a slightly larger portafilter gives me ideas for it's successor. Do you feel the bearings in the handle make a worthy difference? Also, it's not clear where you're setting the switch in the video... could you elucidate?

Mamma mia non ci siamo proprio. 1°) Il macina caffe non va bene che funzioni con cosi poco caffe, si rovinano le macine coniche se va a vuoto. 2°) Il filtro caffe e per 2 tazze quindi sono 18 grammi di caffè, un pò tanti x un espresso solo. 3°) quello che beve il caffe e da paura

What makes this tamper special besides the fact that it is self made, is that it prevents you from rotating the tamper once the tamping is done. FWIW.

I bought it years ago from a professonal coffee machine technician. It's a standart single spout, so I guess you can easily find it on the 'net. Good luck.

Get yourself a grinder that can grind fine enough that will stuck the lever in the up position. then gradually grind coarser until you get to the right point. Also let the machine warm up for at least 10 minutes,until you can not lay a finger on the front of the group for more then half a second. And ofcourse use as fresh a coffee as possible. (start roasting !). La Pavoni owners have a long jurney ahead of them, always. Good luck and let me know of the progress.

Thank you for this video. I have the "professional copper-brass" that is pretty much the same as the europiccola. I can't get much crema (just some) and thinking is either the coffee or the grind. I can't get "finer" grind with my grinder. I use lilly coffee. Any suggestions?
