Really good video. I personally prefer the hand tossed approach to flattening out the dough, cause personally I feel that the crust of a good pizza needs to rise up a bit to keep the ingredients from sliding off, and I find that using a roller destroys any possibility of having that edge. However, that has to be one of the easiest recipes I've ever seen for pizza dough. I'll have to try it.

One reason it's breaking is because you didn't knead the dough enough. Pizza dough requires a lot of kneading - 5 mins is, in my opinion, not enough. 15 minutes of machine kneading, or around 20 minutes of hand kneading would be ideal. To test your dough, tear off a small chunk and flatten it out in a circular shape. If you can pull the dough outwards into a thin, translucent membrane (like the skin of a drum), then its sufficiently kneaded. If it tears, then you need to keep kneading.

Not sure why it's breaking, but the springing back is from gluten in the dough. When it wants to keep springing back on you then what you do is roll it out as far as it goes easily (in other words don't try too hard or take much time trying to force it out, just take a few seconds to roll it out) then let it rest for 10 minutes before resuming the rolling. That rest period will cause the dough to "relax" and allow further rolling out.

I put one half of my pizza dough in the fridge overnight. The dough had risen, but when I got it out today I found it really hard to make it plyable. Each time I rolled it out it would return to its original size and rolling it too far out would cause the dough to break. What could've caused this?

Instead of cornmeal I used cooking oil spray and then I sprinkled some light flour on the pan. Worked like a charm!
