ok..thats a good tip...Will addition of lime juice prevent crystallization of sugar.I remember my mom telling me that addition of lime juce to sugar syrup tends to prevents it from crystallization...Does this work here as well or will it change the taste of the chutney? You could use brown sugar - the taste is pretty good. One thing we noticed...once you keep the chutney in the refrigerator, the sugar tends to crystallize. You could put it in the microwave for a few seconds and it is fine. The chutney made with jaggery does not crystallize.

Sorry Nains, I was trying to reply to your comment and I accidentally removed it instead :(. When trying to thicken the chutney, you should thicken it only to where it sticks to your spoon. It will seem too thin at the time but will thicken when it cools. If you try to thicken it on the stove to exactly how you want it, it will definitely become too thick or "wax" like you said. Hope you try it again.

The salt in the onions helps the moisture release faster hence speeding up the cooking/browning process. Chicken, when over-cooked tends to get tough. You want to keep it on the stove till it cooks and is not raw. Chicken cooks very fast contrary to a lot of beliefs. Poking holes in the chicken is a good idea espically if it is chicken breast that you are using. Here we have made bite-size pcs and we have used chicken thighs, whick are very tender and juicy.

the idea of adding salt with onions being fried was new to me. however, i wanted to add why not keep stir frying the chicken with the masala a little more longer. also, you could make few slits to the chicken with fork so the masala seeps into it.

I agree you usually don't. I like my makhani a little sweeter though so this is probably why they put it in there. I usually see recipes with "yoghurt" which is a milk and yogurt curd I think and it's supposedly used in a lot of indian dishes. but never the less this recipe looks equally as delicious and I can't wait to make it =D

Here in the US (in Indian grocery stores) shredded coconut is available in two varieties - a coarse shred and a fine shred (coconut powder). We use the fine shred variety. The coconut is dessicated, not coconut milk powder. Probably 1.5 cans (450 ml) might be too much for 4 cups of coconut - try using 1 and 1/3rd cans of condensed milk. Good luck!

Okay ... I've tried this twice now. The first time I used shredded coconut and it didn't seem to absorb the milk. When it cooled, it was very mushy. The second time, I went to an Indian grocer and the lady told me 'coconut powder' is the same as coconut milk powder. Again, it was so mushy I couldn't even attempt to cool it. I can't find a 14 oz can of condensed milk either ... I have to use 1.5 cans (I'm in canada so one can is 300 mL ... a little over a cup). HELP!

If you are looking for authentic indian coconut burfi search for recipes that don't use condensed milk and dry coconut flakes and that don't refrigerate the burfis. This video is a totally non-indian short-cut way of making burfi. The original version requires fresh coconut, sugar and ghee (clarified butter) and a bit of cooking experience to get the mixture to the right consistency and form.

I have it marinading right now, will cook tomorrow. marinade did not taste right to me but i really didn't know how to tweak it. i can cook a nice traditional bbq chicken and i plan to use some of those techniques when cooking this chicken - such as adding olive oil to the marinade and just basting with that. fingers crossed. has anyone out there found ways to tweak this recipe? writing a recipe for 6 pieces of chicken seems silly, who would go through all this hassle for 6 pieces of chicken?

Yes, you can use Chicken breasts and thighs as well. The presentation with drumsticks is awesome and that is why we used it. Keep in mind that of you are using chicken brests, baste it more often and make sure it does not dry out. Also, the cook a lot faster than thighs and drumsticks.

We haven't encountered that problem. With Indian cooking, especially North Indian, tomatoes are generally added in the beginning with onions, ginger and garlic to form a "masala". Meat and vegetables are then added to the masala. If anyone knows of any scientific research on this, we would be interested in knowing. Thanks.

the way I do my chicken curry , fry onions first then add ginger and garlic then add 2 sticks cinnamon,6 peppercorn,4 cardomom,1 teaspoon cumin seed,5 whole cloves,2 bays then after a couple minutes I add the meat(already mixed ahead with tumeric) and stir fry a minute or so then add the tomato and water, after its come to a boil ad the chilis, when its done I add cilantro. I like my curry spiced well and hot, but lately my stomach cant take it :)so I will try this because it look less spiced.

I partially agree with u.....well, even in India most (~99%?) people don't use oven for biryani..... I have been to Mauritius, Port Louis, and have tasted Mauritian biryani as well, they are a bit different but the basics are same..... If you are looking for a healthier option, then you could substitute tofu for paneer. The taste/texture will be a little different, but it still tastes good. Wow thanks! My husband is from India and over the past 5 years, I've been practicing Indian cooking every day. I've mastered almost every other dish, and all our Indian friends eat at our house now, lol. But the one thing I could never do was naan or chapatties! But I will try your recipe, because it looks really good! Before when I tried other recipes, they always come out rock hard, and tough and they never puff up at all. I'll let you know if I am successful with these.

SMTC, I love these helpful videos. I often go to a Burmese restaurant that serves "Thousand Layer Bread", I'm convinced they are chapatis/parathas. I saw the technique in the Spinach Paratha video to make it more layered. But the restaurant often serves the bread with a Curry Potato or Curry Chicken sauce, on the side. Is this popular? Any hints for the Spicy Curry Potato sauce? Thanks, great videos!

Hi! Thanks for your tip about using the chopper blades to knead the dough in the food processor. It does work better than plastic one. Also, I had never tried freezing the dough before and it turn out just fine. Normally if the dough is kept in the fridge it becomes a bit dark after a day. But the frozen and thawed dough did not change any colour. Thanks for all the efforts that you are taking in creating these videos.

Hi ...flower, We use chapati atta (whole wheat flour) available at the Indian grocery store. You can use the whole wheat available at any US grocery store, but it is less refined and therefore, your chapati will be darker in color. The texture may also be a little different but will taste fine.

While rolling, we tend to put more pressure in the middle of the chapati and release the pressure as we reach the outer edges. So, the middle might be rolled too thin to puff. After you finish rolling, if you rub your hand across the chapati, you will notice the uneven texture. Try to roll it so that it is even all the way across. Also, gently press with a spatula on the portions which have puffed to force air into the portion which has not puffed. Also, practice makes perfect :)

thankyou so much SMTC. i prepared it the way u had instructed and it turned out really fluffy and nice.but again, all three chapathis i made became fluffy only in the sides and not in the middle.the center part of the chapathi doesnt swell even when i press it. y does this happen?

Are you using oil in the dough? Oil keeps the chapati from becoming too chewy and hard. Also, after you cook each chapati, keep it immediately in a covered (preferably insulated) container. With this recipe, your chapati should remain soft. You can warm them again on the open stove or tava, but NOT the microwave. Good luck!

There are a lot of different ways of making a paratha...one of the ones you mentioned, then there is plain pratha (like the one we have done) and laccha paratha, pahadi paratha amongst many others. Paratha is usually when the 'roti' is fried, with or without oil inside it.We will be doing the other types of parathas soon...look out for them.

This is different from Paratha in that the Paratha rolling out technique is different. It involves folding over and adding more oil to the dough after you have kneaded it. Thats what gives the Paratha its characteristic layers.

I leave the ziplock bag on a plate out (in the winter) or in the fridge (in the summer) and it is ready to use for dinner the following day. So bottom line is I use one and take another one out for the next day. Hope this helps.

heavy whipping cream will work. i am very particular about chemicals & synthetic compounds added to food. you can buy heavy whipping cream & whip in a blender for 1 minute & it will turn to "whipped cream"! i also suggest fresh mangoes as well. you will taste the diference & it's better for your health!

We get so accustomed to some of the conveniences of the US - Cool Whip, being one :). Unfortunately, many other viewers from other countries are having the same issue not finding whipped topping. We don't know of any substitutes but if anyone else does, please feel free to share.
