Poking holes in the chicken is a good idea espically if it is chicken breast that you are using. Here we have made bite-size pcs and we have used chicken thighs, whick are very tender and juicy.

I usually see recipes with "yoghurt" which is a milk and yogurt curd I think and it's supposedly used in a lot of indian dishes.

Again, it was so mushy I couldn't even attempt to cool it. I can't find a 14 oz can of condensed milk either ... I have to use 1.5 cans (I'm in canada so one can is 300 mL ... a little over a cup). Thanks for your tip about using the chopper blades to knead the dough in the food processor. It does work better than plastic one.
Also, I had never tried freezing the dough before and it turn out just fine. Normally if the dough is kept in the fridge it becomes a bit dark after a day. But the frozen and thawed dough did not change any colour.

So, the middle might be rolled too thin to puff. After you finish rolling, if you rub your hand across the chapati, you will notice the uneven texture. Try to roll it so that it is even all the way across. Also, gently press with a spatula on the portions which have puffed to force air into the portion which has not puffed.

Also, after you cook each chapati, keep it immediately in a covered (preferably insulated) container. With this recipe, your chapati should remain soft. You can warm them again on the open stove or tava, but NOT the microwave. Good luck!

The salt in the onions helps the moisture release faster hence speeding up the cooking/browning process. Chicken, when over-cooked tends to get tough. You want to keep it on the stove till it cooks and is not raw. Chicken cooks very fast contrary to a lot of beliefs. Poking holes in the chicken is a good idea espically if it is chicken breast that you are using. Here we have made bite-size pcs and we have used chicken thighs, whick are very tender and juicy.

the idea of adding salt with onions being fried was new to me. however, i wanted to add why not keep stir frying the chicken with the masala a little more longer. also, you could make few slits to the chicken with fork so the masala seeps into it.
