You need to refrigerate the skewers after you put the meat on them not before. Try it again, don't give up :)

A heck of a lot cheaper than buying them for 5$/6 rolls at Fresh Fields! Also, I saw your site - Zatar spice is hard to come by, gonna be ordering some soon. Thanks again.

Or you can try to pre-chop everything ahead of time. What really takes time is rolling the grape leaves and cooking them. Try pre-making a batch but do like I did in the video and show them all the steps :)

You can marinate ... By: dedemed. on 16 Aug 08, 16:50:30 You can marinate the meat overnight with the same ingredients but make sure the meat is cut thin but large flat sheets. It would also be a good idea to incorporate a layer of meat that has some fat on it as well to keep the meat tender b/c when you use a roaster, it tends to dry meat out. Stack the marinated meat in layers alternating with the meat that has fat. Then cook according to roaster instructions. Let me know how it turns out :)

By: dedemed. on 18 Oct 08, 17:20:41
I like to add yogurt because it makes the texture a bit smoother and it also adds another element of tartness to the hummus but it's not as strong as the lemon juice. The consistency comes out wonderful, give it a try. HAPPY COOKING!
By: dedemed. on 18 Oct 08, 17:18:53
I would say to add more tahini, it serves as a type of base and it evens out the strong flavor of the garlic and lemon juice. Add about 1/3 cup more tahini and a tablespoon of yogurt. Have you tried my recipe yet? Try it out and let me know how it turns out. HAPPY COOKING!
By: tehzeebs82. on 18 Oct 08, 06:48:32
what"s the science behind the yogurt in the mixture ????
By: deadbabyfootball. on 17 Oct 08, 05:12:11
I haven't tried this one persay, but i've always had the right texture and it always comes out okay, but for some reason, its always got a strong "burning" taste to it, im only using like 1.5 cloves of garlic, am i using too much Tahini with it or what would cause it?

By: dedemed. on 11 Oct 08, 22:47:22
You can always add more garlic or lemon juice to the hummus mix. Also add a teaspoon or 2 of water helps to make it smoother when you blend it.
